4 One Pot Recipes for Camping and Vanlife
The One Pot , you know?
The One Pot is a cooking technique that consists of cooking all the ingredients of a dish in the same saucepan/frying pan/casserole.
The first One Pot recipes popularized (especially on social networks) were pasta dishes. But in the same idea, you can also prepare rice, lentils or quinoa!
You can imagine that the all-in-one One Pot preparations are perfect for vanlife and camping... Indeed, these camping recipes allow you to prepare meals easily without the need for a lot of utensils and above all... they allow you not to having to do too much washing up once the meal is over (and therefore not using too much water!).
Personally, we love… A saucepan and you're done! ;)
Our 4 One pot camping recipes:

1. One pot pasta with zucchini, tomatoes and goat cheese |
Ingredients
- 200g pasta of your choice
- 2 cloves of garlic (or garlic powder)
- 300g zucchini
- 20 cherry tomatoes
- Basil
- 60g of goat cheese
- Olive oil
- Salt and pepper
Preparation
- Rinse the cherry tomatoes and zucchini. Cut the courgettes into small cubes and the cherry tomatoes in half. Peel and chop the garlic cloves with the basil leaves.
- In a saucepan, heat a drizzle of olive oil and sauté the minced garlic quickly.
- Add the vegetables and the pasta, mix well then add 50cl of water.
- Bring to the boil and cook for about ten minutes (variable depending on the pasta). The liquid should be absorbed and the pasta al dente.
- Off the heat, add the goat cheese in small pieces, salt and pepper and mix.

2. One pot minced meat and tomato macaroni |
Ingredients
- 650g of minced beef- 3 cloves of garlic
- 300g of macaroni or other short pasta
- 750 ml of milk
- 1 teaspoon of oregano
- A can of diced tomatoes
- Basil
- A bag of mozzarella in cubes
- 50g of grated parmesan
- Olive oil
- Salt
Preparation
- In a large saucepan, brown the meat in a little olive oil until browned.
- Then add all the other ingredients except the parmesan (to be added just before serving). All ingredients should be submerged in water.
- Heat over medium-high heat, bring to a boil and cook uncovered, stirring regularly. Cook for the number of minutes indicated by the pasta maker, plus one minute.

3. One pot mushroom and tomato rice |
Ingredients
- 50g of rice per person
- Tomato coulis
- Mushrooms of Paris
- Chicken/vegetable broth
- Pitted green olives
- Parmesan shavings
- A teaspoon of garlic powder
- Water
- Olive oil
- Salt and pepper
If you wish, you can add chicken cutlets that will have to be cooked separately and added at the end of the preparation.
Preparation
- In a hot and oiled saucepan, pour the basmati rice rinsed with fresh water.
- On top, pour about 35 cl of tomato coulis and place about ten fresh button mushrooms cut into strips.
- To enhance the taste of your one pot rice, add chicken broth in jelly, pitted and halved green olives . Season with a teaspoon of garlic powder , salt, pepper and a drizzle of olive oil.
- Add two large glasses of water and cook until the rice is firm or softer according to your taste. Decorate with parmesan shavings then serve your homemade one pot rice immediately!

4. One pot broccoli and lentil curry |
Ingredients
- 250g of dried green lentils
- 250g of carrots
- 300g broccoli
- 1 yellow onion
- 20cl coconut milk
- 1 vegetable stock cube
- Curry
- Olive or rapeseed oil
Preparation
- Cut the onion , peel the carrots and cut them into rings. Cut the broccoli into florets.
- Put a drizzle of oil in your pan and brown the onion for 2 minutes. Add the lentils , carrots , broccoli and crumbled broth and mix everything together.
- Add 25 cl of water and 20 cl of coconut milk.
- Season to taste and mix well then start cooking for 20 minutes. Feel free to lengthen the cooking time depending on your lentils.
